My Big Culinary School Project Last Fall

Chicken Mole, my second entrée. My friend Kim helped me create this chicken mole recipe. We added Mexican chocolate and peanut butter. It was delicious!

This was my vegetarian option as an entrée, a baked sweet potato with a chipotle black bean and corn salad and a vinaigrette. Delicious!

Black beans with authentic queso fresco! Yum!

This is a Mexican White Rice with onions and cilantro. I used a Calrose sticky rice because it's my favorite.

One of my favorite things, ever! Sauteed jalapenos in butter and canola oil! These were to be served as an addition to the pork carnitas.

My churros (Spanish doughnut) and Mexican Dipping Sauce. These were a big hit at the buffet!

Yes, I picked out the sunflowers and vases. Chef bought them from me to use them again.! I love sunflowers!

I wanted red napkins and blue tablecloths with this napkin fold.

There's my molcajete I'm so proud of, and the salsa and quacamole were delicious! There are hot tortillas in those napkins!

The table runners I bought were wrapped around the vases instead of used as table runners.

Shredded Pork with Peppers and Onions, served with flour tortillas.

Chicken Mole, worth another shot. They were delicious, and new to a lot of folks.

I told you before, the best part of this project was my friends showing up for the buffet. Some of them surprised me, and all of them were there to support me. I love my friends! There are pictures of my friends that Janise, my sister, took at their table. I will try to get them and post them!
